This dressing sauce is smoky and nutty and bright and exactly what you need on your salad. Except you’re going to want to drizzle it on your roasted vegetables and protein. It makes a nice, healthier dip for crudite platters. All you have to do is adjust the amount of water to your desired consistency.
This stuff will last about a week (maybe a little more) in the fridge, but you may need to revitalize it with a little extra lemon juice after a few days.

Ingredients
- 1/2 cup tahini
- 3 T lemon juice
- 2 T extra virgin olive oil
- 1 large garlic clove grated
- 1 T adobo sauce
- 1 ts honey
- 1/2 ts kosher salt or to taste
- 1/2 cup water

- Combine all ingredients and mix. Add up to an extra 1/4 cup water to thin out the consistency if needed.
Recipe Notes
Sauce can be made several days ahead and stored in the fridge for a week. Maybe a week and a half if you add a little extra lemon juice.
